I absolutely LOVE breakfast. I could happily eat breakfast for any meal of the day. But during the work week I often don’t have time eat a quality breakfast; usually I am eating and simultaneously gathering my scattered belongings and running out the door to work.
These Zero Waste Breakfast Bites are the perfect to-go breakfast and are fantastic because you can change the ingredients to include anything that you need to use in your refrigerator. Have a few stalks of kale? Some extra mushrooms? Just throw them in! This recipe can be totally tailored to you. I personally love to throw in roasted potatoes if we have some leftover from a previous meal.
These Bites can be frozen. Just remove them from the freezer and microwave for two minutes. These are perfect for those busy mornings!
Breakfast Bites
Yields: 12 Breakfast Bites. Prep time: 30 minutes. Cook time: 20 minutes. Waste: Zero!
Ingredients
- 10 eggs
- 1/4 cup homemade almond milk
- 4 tbsp ghee
- Pinch of salt and pepper
- 1/4 cup of a combination of different veggies (mushrooms, spinach, zucchini, onion, etc.)
Instructions:
- Preheat oven to 400 degrees.
- Chop all of your veggies into bite-size pieces.
- Add 2 tbsp ghee to a sauté pan over medium heat. Add your veggie mix and stir occasionally for 5 minutes, until veggies are soft.
- In a bowl, whisk together eggs, almond milk, and salt and pepper.
- Melt 2tbsp ghee. Use a silicone pastry brush to apply the melted ghee liberally to each muffin cup.
- Add a spoonful of your sautéd veggie mix to each muffin cup.
- Pour enough egg mixture to cover the veggies and to fill each muffin cup about 90% full.
- Bake for twenty minutes.
- Once you remove the muffin tin from the oven, use a butter knife to gently remove the Bites. Place them on a cooling rack.
- Once cooled, serve with a few slices of avocado on top or some fruit on the side!
