I am a huge fan of “grab and go” snacks, but finding nutritious and filing zero waste snacks to fuel my body between meetings, walking the dog, volunteering, and/or water polo practice is a challenge for me. I used to devour Lara Bars, but I hated throwing away the non-recyclable wrapper (and they cost a pretty penny at around $3.00 each). I realized that I needed quick snacks to satisfy my hunger between activities, so I decided to create these Zero Wasted Carrot Cake Bites after my favorite Lara Bar. These Carrot Cake Bites are not only nutritious and filling, they are package free! All ingredients can be found in the bulk aisle of the grocery store.
Zero Wasted Carrot Cake Bites
Yields 20, 1-inch diameter balls. Prep time: 20 minuties. Waste: zero!
Ingredients
- 2 small carrots, shredded
- 1 cup raw walnuts
- ½ cup raw almonds
- ½ cup shredded coconut
- 1 Tsp. cinnamon
- 1 Tbsp. coconut oil
- 8 Medjool dates (pits removed)
- ½ Tsp. sea salt
- ⅛ cup milk (I use almond milk, but any milk should work)
Instructions:
- Add all the dry ingredients in a food processor and mix together for 20-30 seconds.
- Try to form your mixture into a ball. If it doesn’t stick together or appears slightly dry, add milk to the food processor and blend again. Repeat until the mixture sticks together in a ball.
- Once the mixture sticks together, form into 1-inch balls.
- Put in the refrigerator for thirty minutes to harden.
- Store in the refrigerator and enjoy!
Note: Balls can easily be formed into cookie-like shapes and/or bars. You can use a blender if you do not have a food processor.
